Scott are you going to change it to an L shaped kitchen to open it up more? An alternative to the acrylic you asked about in the other thread is to increase the hipster vibe with some 600 x 600 porcelain wood look parquet tiles. Or there is plank tiles. Or some groovy concrete look 600 x 600...
