Not sure if this also applies to residential houses but Australian Standard I use in my job states that a grease arresting device (rangehood) must be 1050mm from a cooking surface that has a open flame (gas). Look up AS1668.2 Appendix E Clause 4.1 (b).
You are correct about electric stoves, where the heat source is provided by eletrically operated equipment or a fixed plate above a open flame (solid plate grill) then the allowable height is 600mm.
This can only be reduced if the range hood is self exhuasting in the case of a fire.
