Old style kitchen exhaust fan

We are doing a kitchen reno. Original build mid eighties. The cook top is in a chimney look recess and has an extractor fan. The fan has no ducting, it just extracts to the roof space. Needless to say after 30 odd years of sucking up grease the whole thing is pretty gross.

Interested to hear if you've had a similar scenario and how you dealt with it.

in my house it just had a chimney going to the outside
i just made a few brackets screwed a piece of wood with an exhaust fan into it and it does a great job probably should of gone 2 smaller fans rather than one big one in the middle. it has a little trouble sucking it up from the very sides of the chimney area
