Who do you make a bond cheque to in nsw?

Silly question ... but I was asked to bring in a money order made out to the bond people in NSW and can't find the bit of paper it was written on.

Who do you make such a thing out to? Google tells me NSW Fair Trading, but I thought I'd ask here. REA has an extremely strong accent so I'm ringing him as a second resort. He doesn't want cash.
