I believe this could be a real positive for you. You can't be in 2 places at once so I'm expecting it to force you into organising the shops to operate without you, therefore allowing you to get on with reaching your goals.
If you feel the shop isn't profitable enough for you to step back, by way of not being involved so much would that free you up to find more ways of creating more business. Are there specials to offer local business, corporate opportunities, more catering, more marketing or exposure, sponsorships, schools etc which you could focus on to drive higher turnover.
