New reno

Nearly time to shift into our new 70s home which requires total reno. Walls down, new walls up, wir, ensuite added, 2 new bathrooms, new kitchen, proper heating installed, garden out, miles of concrete driveway reshaped, repaint front railings, big new covered extension to back patio. Cant wait. There is also 'the dungeon' This is an enormous space under the house below legal height. The ceiling is beautifully plastered with cornices etc. but we are going to risk pulling it all down and exposing the rafters and plastering in between them to see if we can just about get legal height. Question 1: does anyone know of a thin/highly soundproof product we can install in between the ceiling/upper floor rafters before we plaster? Question 2: the upper floor has carpet we will be pulling up and replacing with floating floor. The concrete staircase leading down to the ground floor level is carpeted also and I dont want carpet or floating floor on these. The stairwell walls are brick too. We will plaster all the ground floor brick walls, but would it give an interesting textured look to just paint the stairwell walls white and also the stair? Or would it look more like a real house to plaster the stairwell walls. If we paint the concrete stairs white with concrete paint, would that wear well?
