Cypress floor board to replace kitchen tiles

I am thinking of replacing our kitchen tiles with cypress pine floor (on top of MDF floor board).

I am thinking about getting the T&G + end matching type and nail it to the existing floorboard. The cypress flooring will be polished/varnished with hard-wearing varnish id such thing exist to protect it from water and prevent excessive dents.

Can anyone comment on pro and cons of doing so?

Can anyone reccommend a good supplier of cypress floor board materials in NSW?
