Your subfloor should have no bearing on what your floor coverings are, the only thing that it can effect is the cost to lay solid timber floor.
Spantec is just a steel version of a pier and joist system.
Personally I like a bit of contrast, but usually put timber floors in the kitchen as we'll.........
